Falafel is a deep-fried ball or patty made from ground chickpeas. It’s a traditional Middle Eastern street food, commonly eaten as an appetizer or in taboon bread (a form of flatbread) as a sandwich. It’s topped with hummus, tomatoes and pickles and tahini-based sauce.
The origin of falafel, then made with fava beans, seem to have originated from Egypt, possibly dating back to the Pharaohs, and later adopted by Coptic Christians as a replacement for meat during Lent. The dish eventually migrated northwards to the Levant where chickpeas replaced the fava beans.
